Wow....long time!

I just realized my last post was almost 2 weeks ago! Wow! Time has flown! I got roped into/volunteered to be on my neighborhood HOA Board of Directors (the people you love to hate!) and my first big project has taken every bit of spare time I have (which isn't much!). I am finally finished!
Molly is officially potty trained! Well, mostly potty trained. She has not had a "wet" accident in over a week! I think it will be awhile until she does all of her "business" in the potty (know what I mean?), but that's ok. At least she saves that for her pull-up at nap time. Her teachers at school told me that she not only cheers herself on when she goes on the potty ("great job!", clapping), but she also cheers on anyone else who is potty trained and goes. I told them that didn't surprise me, because she cheers me on too..."Good job mommy! I so proud of you!" What a hoot!

On a less celebratory front, whining has become an art form in our house. Molly has developed an all new level of endurance when it comes to whining. Unfortunately, I have not developed the same level of endurance for listening to it. I guess this is part and partial to being 2, but it's kind of like living with a 13 year old with PMS. I understand now how men must feel, living with those kind of mood swings. It will make your head spin!

We are off to the YMCA on this rainy Saturday morning. We'll just call it a "recession date"! Speaking of the recession, I made a cheap and easy meal the other night, "Chicken Barley Chili". It's on the back of the Quaker Quick Barley box. It's easy, cheap, healthy, and tasty! enjoy!

Chicken Barley Chili

1 can diced tomatoes, undrained
1 16oz jar salsa
1 can fat-free, less sodium chicken broth
1 cup Quaker Quick Barley
3 cups water
1 Tbsp. chili powder
1 tsp. cumin
1 can black beans, rinsed and drained
1 (15 oz) can corn with peppers, undrained
3 cups chopped, cooked chicken (about 1 1/2 lbs.)
shredded cheese
sour cream

Combine first 7 ingredients in a Dutch oven. Bring to a boil over high heat; cover and reduce heat to simmer for 20 minutes. Add beans, corn and chicken; increase heat to high until it comes back to a boil. Cover and reduce to simmer another 5 minutes. Top with shredded cheese and sour cream.
*if it gets too thick after standing, add a little more chicken broth or water to thin a little.

Makes 11 cups- 270 calories, 4g fat, 5g fiber

So excited for you (and a little jealous!) that Molly is potty trained! I can't WAIT until Andrew is!!! That chili looks delish so I might be making that one night this week! Looking forward to seeing you Mon. night - I have a bag of Auburn clothes for Jack and some other random stuff you can have PLUS I'll have all my consignment stuff priced if your interested in any of that!

barley chili sounds yum ... what exactly IS barley? is it one of those things that i'll ONLY use for that? if so, Christy? wanna split that? if you get it, i'll pay ya for a cup or 2 :) we'll recession it together??? :0)

I'm also bringing some boy clothes to bday club to whoever wants them. cute Tucker clothes that I forgot to give to Gretch... up for grabs.
